How spicy is it?  I'm a bit iffy on turkey jerky.  Is it gloriously chewy and salty like Wild Bill's?

it is GLORIOUSLY chewy and salty. and you don't have to get the spicy kind - the regular flavor is also delicious. i don't know what else they use besides tamari but it's fantastic.

and for the record, i'm not crazy about turkey in general, and especially with turkey when it's designed to taste like something else. but this stuff is  - as you mentioned - addictive!
