Title: Hah!
Post by: dazie on November 11, 2005, 12:55:44 PM
A Kansas delicacy:  (there is a big thing about Kansas bashing in the paper today I guess.  This was one of the responses online)

Honey Roasted Flying Monkey:

1 oven ready young flying monkey
2 T clear honey
2-3 oranges
1 bunch watercress
3-4 T oil and vinegar dressing

Preheat oven to 425*
Wipe down monkey and reserve liver for FM pate.
Prick skin all over and rub with salt. (the Monkey, not you)
Place on roasting rack and baste with honey.
Cook 'til meat thermometer inserted in thigh registers 190*.
Arrange on large platter with watercress and orange segments. Sprinkle dressing over the top and serve with roasted root vegetables. YUM!

Isn't 425 a little high?  Shouldn't you slow-roast so that the meat falls off the bones?
