Lazy person's enchiladas. I made this up a few years ago when I didn't feel like rolling the enchiladas.
Mix cubed cooked chicken with undiluted cream of chicken soup, grated cheddar and/or jack cheese, and canned chopped chili peppers.
Layer in a baking dish with corn tortillas and cheese, like a lasagne, making sure there's a layer of cheese on the top.
Bake until the cheese is melted and everything is bubbly.
Yum.
You can add spices if you want- tonight I put in cumin, thyme, onion powder and annato.
That sounds good, dazie. If I come to Kansas will you make some for me?

Sure. :)
That sounds awesome.
Mmmmm.
I'll cumin your casserole anytime dazie.
I do that with seasoned beef and enchilada sauce. When I used to eat I did.

I don't know whether to giggle or vomit at that thought. *lol*
Remind me to tell you about my former boss' potato salad some time...

Neither. You're supposed to swoon.
Geez, I'll save my cumin powers for someone that will appreciate them.
I'd like to have that casserole for lunch today. Minus the cummin.

If it's oven safe I'd say go for it. OR- go to the grocery store. In the section with the plastic wrap and ziplok baggies there are plastic baking pans. Glad makes them. They're like $6 for 3. Follow the directions on the box and you'll be fine.

No, no, no! You need to go to a home interior megastore and purchase the Silikon brand baking apperati that are made out of oven-safe silicon. They may not make you a better cook, but they will make you one of the cool kids.
Plastic in the oven?!? You're trying to trick me, aren't you? I won't fall for it.
